Let’s be franc leek pie doesn’t make any child dreams, further more when it’s named Flamiche which is the real name of this recipe coming from the North of France. But when growing this is one of the recipe I keep and I do quite often for my own children, and surprisingly they love it!
What do we need?
For the crust:
-200gr wholewheat Flour
For the filling:
-3 to 4 Leeks
-1 egg yolk
-15cl Crème Fraîche or sour cream
-100gr Comté cheese (you can do Cheddar)
-Non vegetarian can add some bacon.
-Salt & Pepper
how do we process?
-Turn on your oven to 180°C (Th 6)
-Blend the flour, the soft butter in adding the water little by little. Keep in the fridge for 15 min.
-Melt the butter in a pan, and add the chopped leek, salt and pepper. Cover the pan and let it cook. (you can have a glass of wine now).
-Roll up the crust, pick it with a fork and pre cooked it for 10 min.
-Take the pan off the cooker.
-Add the yolk and the cream inside the pan, stir until it’s creamy.
-When it’s done place the Bacon (cut) if you want or just fill the crust with the mix of leek.
-Put the grated cheese on it, add some Nutmeg and place it in the oven for about 20min.
-Serve it with a salad, or a soup.
What do we drink with?
-Côte de BLaye or other Bordeaux, Chinon for red
-Riesling or my favorite: A Pinot Gris either from Alsace or from Malborough Valley, New Zealand.
